I'm trying to find documentation on the Gstreamer pipeline settings. In particular, I'm back into ripping more CDs using mostly Sound Juicer (in Ubuntu Gutsy), and it looks like I can adjust the quality and maybe speed of ripping with the "Lossy" profile that defaults to Ogg Vorbis files.
The current setting (probably default) is:
audio/x-raw-float,rate=44100,channels=2 ! vorbisenc name=enc quality=0.5 ! oggmux
