Actually, while docked, you are (currently) completely safe. Space
stations, both NPC and PC owned, are never actually destroyed. Some
stations can change ownership, but if you are docked at one when that
happens, none of your things are affected. However, once you undock, you
may not be able to dock again, which can be adverse if you happen to
have a lot more stuff stored there than you can carry out. On top of
that, undocking into that kind of situation, you are very likely to not
survive =)
All this can only happen out in the wild areas (called lo-sec or 0.0),
in hi-sec (0.5+) areas, there are police (called Concord) who enforce
very draconian no-shooting policies against other players. It's not 100%
safe, which I learned by losing about 600m to a suicide gang in Jita,
but it's very very unlikely that you can be harmed sufficiently before
Concord eliminates your attackers while in empire.
As with most MMORPGs, your fun level will be directly dictated by the
people you hang out with.

breakfast noir:
..."Without thinking, I crammed that deadly sliver of metal carrying the
city's most infamous breakfast food into my maw. The tiny flakes snapped
and popped, like the fingers of a mob snitch after they found 'im. It
wasn't good cereal. But it was better than a gut fulla led."
