Maybe you could create your own custom kickstart script. then you could exclude all the rpms you don't really want.
btw, have you used Centos? it's based off of redhat as well, but is a little more enterprise level than fedora, not quite so bleeding edge.

FC5 was just unstable and I cannot remember why I passed on 6. Right
now I am still running FC4. All I am running is apache, php, perl,
samba, postfix, imap, squirrel mail, ssh, webmin, apcupsd, and ncidd.
