Looks like you are about to go distro "shopping". I highly suggest
LFS, DSL or Gentoo
Gentoo has met my needs. But, I've not stopped exploring options.
I've also heard good things about Ubuntu Server edition.

create a headless system with apache, php, perl, samba, postfix,
imap, cron, logwatch, and apcupsd. I am not interested on all of
the other crap that anaconda installs without letting me know it is
installing it. Another idea would be to use mandrivas’ installer
with fedoras’ rpms.
