I think GD might be able to assist you with this.
Here is a google search I just performed, that shows promise
http://www.google.com/search?hl=en&q=gd+pdf+to+jpg&btnG=Google+Search
one of the notable results was on Zend's website.
http://www.zend.com/forums/index.php?t=rview&th=1649&goto=4312
granted they show you how to do it in PHP, but the procedure would
probably be roughly the same in a shell script or command line.

I have a collection of PDF documents (actually issues of Scientific
American) and each one has a cover page that I would like to export to a
.jpg or .png file of a certain size. So is there an easy command to
just
convert the first page of a .pdf to a .jpg? It would be best if I can
specify the dimensions in pixels, or at least one of the dimensions in
pixels.
