There is always hackerslab (www.hackerslab.org), one of the better comp sci teaching tools I've seen. If you get through all the challenges on there (without copying and pasting), you will certainly understand the fundamentals of data structures and Unix OS design.

I tried to put up a box or two for hacking attempts as part of the Info Security Class I teach (HMI8435) and the department decided that the liability surrounding doing so was not something they were not willing to even discuss.  The thought of misdirected hack attempts or inadvertent denial of service of other systems because of errantly targeted or badly crafted attacks was just something they could not risk.  We even suggested doing so in a disconnected unique network with a physical air gap to any other network and the answer was a resounding NO.
