how does lvm store data on multiple disks? is it comparable to a raid stripe?

if i have a server with three drives, a 40GB and two 250GB, and i
configure the two large drives as a logical volume for */home* in what
way is data written to the drives? does it fill the first drive until
it's out of space and then start on the next? does it write one file
to one drive and the next to the second?

i don't really understand this aspect of lvm, yet. i'm reading up on it now....

the situation is this: i need to build a server for a small business.
said small business will be storing audio, video and graphic design
data (your basic media/design studio data). budget is very tight, but
i need to squeeze the max amount of space i can into the box.

i'm considering skipping raid in lieu of an lvm configuration so i get
the most space from the two large drives. is this practical? raid
would be nice, but not mission critical. i'll make backups and dvds of
data weekly...plus designers usually have a knack for storing things
locally anyway.

i'm just curious if lvm would be a good choice?
