It has been my experience that if something is "slow", it usually is
related to either DNS, authentication during pop/imap, or disk I/O on
the machine. If postfix is having trouble, most of the time it will shut
itself down, which should pop up an error on whatever client you're
using (although I second the suggestion to get Thunderbird on to replace
OE, which is a security problem waiting to happen). If postfix is
throwing errors, the cause is usually pretty obvious when
/var/log/maillog is checked.
Imap should also be logging to /var/log/maillog, so problems there
should be pretty obvious as well. Don't forget tail -f to monitor the
log for troubleshooting purposes if needed.
If you still need help, grab the output from postconf -n; tail
/var/log/maillog and someone can probably get you pointed in the right
direction. I'm certainly no expert, but I've done some pretty cool
things with postfix.
