RedHat's pretty good. Gnome, like KDE, is bloated.. though maybe not
quite as much.

That's unusual. Either you somehow have it messed up (possibly through
no fault of your own) or you have a hardware problem.. if it's the later
a different dist or window enviroment may or may not help.

It's good but isn't especially newbie friendly.

As I said it's not the usual behavior. Linux, X, and Mozilla are usually
very stable. Gnome/KDE are more lacking in stability but still should be
better than Windows.

Scribus looks pretty cool but I have no use for it at this time.. so no
experience yet.

It could although it shouldn't matter since it's opensource. If you find
RPM's for RedHat or compile it yourself it should run just fine. SuSE
RPM's may or may not work better on SuSE than RedHat.

Quanta is okay I guess. I'm not a Dreamweaver fan either so I have no
valid opinion. ;)

Gimp is good but takes some practice to get good with and lacks some
abiltiies Photoshop has.. while having other abiltiies Photoshop lacks.

Photoshop doesn't, to my knowledge, have a Linux version but you can run
it with CodeWeaver's CrossOver Office version of Wine (a Windows
emulation layer).
