I've talked to people who've had a lot of luck lately with Yellowdog on
Mac's current line of laptops.  My personal favorite is IBM's ThinkPad
series, but I'm dealing with a 486 and a P2 on those.  Haven't tried their
newer models.  I've not heard anything good about Compaq laptops and Linux,
so I wouldn't suggest trying them, though they're very nice for the less
intensive winbl0wz users.  Dell's laptops are popular right now, but
overpriced and underpowered.

If you're willing to use BSD instead, go with a new Mac with OS-X.
Pre-installed, and the best interface a macintosh or a unix clone has ever
had.
