Interestingly enough I was just thinking the same thing. You sure could
create music in this fashion, but some of the changes they made on the
video only the most talented of guitarists could play with such
precision.
With guitar it would be pretty trivial to create unplayable stuff. Just
do something with a mix of high notes and open strings, then quickly shift
the "capo" on the open strings. You can't do that in real life, but this
recording technique would make it possible. The guitarist would just play
the wrong notes and then shift them afterward.
