Or if they have backups made of their severs, no telling how long they
keep that information around. I bet they are going to want to cover
their backs in legal matters of people abusing their mail servers.

I suspect this is google covering their backs by saying deleting
something isn't straightforward. Removing the pointer to a file in the
filesystem might make the file vanish, but didn't overwrite the file. If
I simply close a user's account on our mailserver I'd guess most their
email could be retrieved - equally if a user deletes a file with IMAP or
POP3, the data is still there.
