Build your own distro or whittle down whichever distro you are most 
familiar with. For example if you use RedHat then install RedHat with 
custom package selection and remove X, network services, etc. Also if 
you really care about space you'll open your package list after install 
(using something such as RedCarpet) and remove he packages you don't 
want that got installed anyway.. as installers are weird about adding 
dumb extras usually. If you are energetic you can make a list of all the 
packages you have left, download their source, and build your own system 
from those packages. Doing that would remove cruft left over from the 
usual crap thrown in when working with packages. Or maybe try Gentoo?

Just ideas from someone who's yet to find a minimal distro he likes..
