Um...guess I wasn't clear on this. The stuff you see here is the "before"
pictures, indeed, before I had to take out the ceiling too. The wiring
I put in was indeed in the ceiling space, and consisted of many carefully
placed holes in the joists. And a couple of less carefully placed holes,
for that matter. :-)

Yes, it looks like I'll be doing some trimming...I'll have enough left
over to make many nice short patch cables. :-)
