Sure, you can. Just set the outgoing server in your e-mail program's
setup to the name of the linux box. That's all on the Windows side. But
you also have to configure Sendmail to relay for you. For example, you'd
have to ensure that it forwards *only* the e-mail originating from your
Windows machines and nowhere else.

Alternatively, just find an open relay out there and use them to send
your mail :D
