Ensoniq Audio PCI cards are cheap and work well. They can be had for only
$25. If you want an awesome sound card, Sound Blaster Live! cards can be
had for $50-$200. (The really expensive one comes with volume controls
that you can put in a 5 1/4 bay.)
For what you're looking for, Ensoniq Audio PCI will work quite nicely.
